  • 1 lb boneless, skinless chicken breasts, bite-size pieces
  • 1¼ cups uncooked long-grain white rice
  • 2–3 cups fresh broccoli florets
  • 2 cups shredded cheddar cheese, divided
  • 2½ cups chicken broth
  • ½ cup milk
  • 1 tbsp olive oil
  • 2 tbsp butter
  • ½ onion, chopped
  • 1 tsp garlic powder
  • Salt and black pepper to taste

Steps

  1. Brown the bite-size chicken pieces in the butter and olive oil, seasoning with salt and pepper.
  2. Add the chopped onion and cook until softened.
  3. Add the rice and garlic powder and toast briefly.
  4. Add the chicken broth and milk.
  5. Add the broccoli, bring to a boil, then reduce the heat and cover until the rice is cooked.
  6. Stir in most of the cheddar cheese and finish with the remaining cheese on top to melt.

King’s Tips

Want it thicker? Stir in about 1 tablespoon of flour after the onion softens and before adding the broth and milk. Cook the flour for 30–60 seconds while stirring, then slowly add the liquids.

Turkey Meatballs Over Pasta

Ingredients

  • 1 lb ground turkey
  • ½ cup breadcrumbs
  • ⅓–½ cup milk
  • 1 large egg
  • ¼ cup grated Parmesan cheese
  • ½ cup chopped onion
  • 2 garlic cloves, minced
  • Salt, black pepper, and parsley
  • Pasta and marinara sauce
  • Olive oil if using the skillet method

Steps

  1. Combine milk and breadcrumbs into a soft paste. Gently mix in the egg, Parmesan, onion, garlic, seasonings, and turkey just until combined.
  2. Roll into equal meatballs about 1½ inches wide. Expect about 20–24.
  3. Bake at 400°F (200°C) for 17–20 minutes, or brown in a skillet with olive oil and finish by simmering in marinara.
  4. Spoon the meatballs and sauce over cooked pasta and add extra Parmesan if desired.

Keep them tender: Stop mixing as soon as the ingredients are combined.
Same size, same cook time: Keeping the meatballs close to the same size helps them finish together.
